The luxurious Caledonian Waldorf Astoria is the home of the Galvin brothers in Edinburgh, and this iteration of their cross-Channel classicism pleases diners with its Parisian brasserie-styled looks: dark wood flooring and tables around a circular island seafood bar, and waiting staff in time-honoured black-and-white uniforms. As for the food, it's all you'd expect and more, start with perfectly cooked hand-rolled pappardelle, ragout of Highland hare and aged pecorino, or Berwick crab mayonnaise, and then take in duck cassoulet, perhaps, or breast of Perthshire pheasant with Puy lentils and Alsace bacon. Finish with the signature apple tarte Tatin and crème fraîche.
