The menu has a gently conceived modern fusion tack, offering crab cake with mango, cucumber and watermelon in lemon emulsion, or sweet potato and cumin velouté with a Cashel Blue crouton, to open. Then it takes off with Parma-wrapped chicken breast with sun-dried tomato risotto and puréed spinach, or perhaps grilled cod with spinach and fennel peperonata and a tandoori-spiced beurre blanc. For dessert, expect bread-and-butter pudding made with croissants.
