Wallett's Court Country House Hotel & Spa

A straggling ruin when the Oakleys first looked it over in 1975, Wallett's is still theirs 40 years and buckets of TLC later. Cookery classes are now among the attractions. Fixed-price dinner menus kick off with smoked eel and fennel risotto with apple, radish and caviar, prior to aged fillet of beef with creamed leeks, foie gras and truffle, or sea bass with shrimps and capers in hollandaise. Meals end with Pina Colada parfait, or hot chocolate fondant. An enterprising eight-course tasting menu runs the rule from pork and apple arancini with aïoli and baguette to crème caramel with coconut granola.
