This former boozer has left its hard drinking days behind and become a super-smart restaurant with boutique rooms. The bar is still open to non-residents, which is great, but it isn't a pub in the old sense. Right in the heart of the village, there is a terrace and garden serving up views over the Alkham Valley, and once inside expect whitewashed walls broken up with splashes of modern art, wooden floors, stylish furnishings, classy fabrics and subtle lighting. It's smart, contemporary and rather glamorous. There are designer bedrooms, plus accommodation in two cottages at the restaurant's nearby sister business, the Chalksole Estate Vineyard. In the kitchen, Yorkshireman Charlie Lakin flies the flag for local Kentish ingredients, producing robust, modern plates of food that really hit the mark. There's a tasting menu if you want to go the whole hog, and a '10 mile' lunch menu which is quite brilliant value for money, comprising produce drawn from within a ten mile radius of the restaurant. Meanwhile, on the la carte menu, there's no lack of regional bias and some really creative ideas. Crisp pig's trotter with quail's eggs, piccalilli and creeping Charlie (from the mint family) is a first course with resounding flavours, or go for a veggie dish with a poached duck's egg, celeriac, pickled hedgehog mushrooms and wheat flakes. Main courses are no less assertive and appealing. Try braised leg of Kentish hare, perhaps, with shepherd's pie and fillet, or fillet of pollock with purple potato terrine, mussels and coastal vegetables. This cooking has strident flavours, local influence and a lightness of touch. For dessert, Gadd's ale cake with vintage Ashmore cheese ice cream, apple terrine and mulled raisins confirms the craft and creativity here runs deep.
