It may look a little like the traditional country pub it once was from the outside (albeit a rather posh one), but cross the threshold and it becomes apparent that The Marquis at Alkham has morphed into a restaurant with rooms - modern art, stylish furnishings and boutique bedrooms make a fine impression. The smart restaurant offers a carte and two tasting menus (one aimed at the best of Kentish produce), which deliver modern plates of food based on classic flavour combinations. Kick off with ham hock terrine partnered with tomato and apple chutney and toasted brioche, or textures of beetroot with goats' curd and smoked hazelnuts. Among main courses, leg of guinea fowl is cooked slowly au vin, and arrives with dauphinoise potatoes, red cabbage and green beans, or go for fillet of local cod with purple potatoes, a langoustine, and hollandaise sauce. Desserts are a refined and comforting bunch, from lemon tart with chewy meringue and raspberry sorbet, to raspberry soufflé with white chocolate ice cream and crunchy pieces of honeycomb.
