It was the heavenly setting that brought the Swiss family Gysling here to the shore of Lough Eske to build their luxurious hotel complex in the late 1980s. The kitchen uses pedigree Irish produce in imaginative contemporary dishes. Lobster opens proceedings in a relatively traditional mode, delivering the luxurious crustacean encased in tortellini topped with shaved parmesan, truffle and lobster foam. Main-course grilled sea trout comes with a crab croquette and pearl barley in parsley sauce, or there may be venison loin with broccoli purée, red wine-braised salsify and poached plum. Proceedings close with a tasting of orange, comprising a moist Tunisian orange cake with orange sorbet and millefeuille.
