The Saddleworth is surrounded by landscaped gardens and woodland within the Castleshaw Valley yet is just 10 minutes from Oldham and half an hour from Manchester. The restaurant here makes quite an impression, with comfortable leather seats and black linen on tables set with glittering crystal and silverware. Meals begin impressively with an amuse-bouche of, perhaps, lamb hotpot, an immediate sign of high levels of skill and ambition. Chef Anthony Byrom doesn't skimp on his ingredients, adding truffle to a starter of seared scallops with Jerusalem artichoke purée, and is fond of using wild plants and fungi, seen in a deeply flavoured soup of St George's mushrooms, for instance, and the accompaniments of jack-by-the-hedge, monk's beard and turnip tops for pig's trotters. What distinguishes the cooking is its accuracy, balance and seasonality, such as main courses of saddle of rabbit with a selection of autumn vegetables, and wild sea bass fillet with chicory, fennel purée and caviar. The kitchen's labours are appreciated in the home straight too: Lancashire cheese with quince jelly and tangy chutney, an alternative to a masterly pudding such as apple and Calvados parfait with apple milk custard and almond sponge.
