The Saddleworth feels like an assiduous attempt to create a country inn for the modern era. Built of stone, and sitting amid landscaped gardens and woodland with sweeping views over the Lancashire moorland, it's not far from Oldham but feels pleasingly remote from anywhere. The location makes it a popular choice for weddings, and the dramatic decor of Bakers Restaurant, where sparkling glassware gleams against black table linen, exercises its own allure. The opening salvo is some witty little snacking items (including a cucumber mojito and beans on toast). Then the six-course tasting menu ploughs a fascinating furrow through the modern British repertoire, from scallops and cauliflower scented with espresso and adorned with cobnuts and parmesan, through rabbit tortellini with truffled baby artichokes, and turbot with foraged sea flora in shellfish broth, to local free-range pork belly with aubergine purée and celery and Stilton gnocchi. Dessert could be an almond sponge with variations of pear and raspberry.
