A traditional 18th-century coaching inn with a thoroughly contemporary attitude to dining, this pub holds a world record for its collection of 400 gins. In the modern restaurant, hearty, innovative food is created using an abundance of local raw materials. Pan-fried king scallops with ginger and coriander infused belly pork, smoked cauliflower purée, charred cauliflower and burnt apple purée is one impressive opener, followed perhaps by roast Goosnargh duck breast with cider fondant potatoes, five spice-glazed carrots and parsnips, creamed bacon sprouts and Cumberland sauce. Finish with white chocolate and yogurt pavé, gooseberry and elderflower ice cream.
