The Woodlands Restaurant at this hotel is on the first floor to maximise the view over the Glen o' the Downs, with arched windows looking down the valley. Inside, all is soothing pastels and sparkling glassware. The style is what is loosely termed modern Irish. A starter of pan-fried scallops and crispy pork belly is a winning combination, served with rhubarb chutney. Follow with seared beef fillet partnered by a corned beef croquette, sautéed mushrooms, spinach purée and red wine jus, or pan-fried sea bass fillet with lemon rice, vegetable ribbons and a lemongrass and coconut emulsion. For dessert, try minted Baileys crème brûlée.
