Plantagenets, Tudors and Georgians all had a go at Fawsley Hall over the centuries, resulting in the beguiling architectural mishmash we see before us. However mixed the stylistic messages, it all screams 'grand', and the interiors maintain the pace with oak panels, stone arches and the fabulous Equilibrium dining room, with its 25-foot-high beamed ceiling and huge inglenook, flagstone floor and flickering candlelight. That said, the number of covers is kept low, so that a proper feeling of intimacy pervades the place. An ingenious terrine of pigeon and foie gras is presented in Battenberg squares, while a bowl of deep-green parsley soup has its homogeneous silkiness offset with little chunks of smoked eel and a cloud of parmesan foam. A fish main course offers turbot with Evesham asparagus and Lyonnaise potatoes, together with a cucumber-wrapped herby mousse and a rather predominating note of grain mustard. Blythburgh pork belly is daringly paired with lobster and chive mash and red cabbage, and then dessert comes up with a slice of unmoulded burnt vanilla custard, alongside poached rhubarb and strawberry sorbet.
