Plantagenets, Tudors and Georgians all had a go at Fawsley Hall over the centuries, resulting in the beguiling architectural mishmash we see today. It screams 'grand', with oak panels, stone arches and the fabulous Equilibrium dining room, where a 25-foot-high beamed ceiling and huge inglenook, flagstone floor and flickering candlelight create a real sense of occasion. That said, the number of covers is kept low, so that a proper feeling of intimacy pervades the place, and the kitchen deals in imaginative 21st-century ideas with clever flavour combinations and impeccable ingredients. Start perhaps with pressed Landes foie gras with apricot granola and sour apples, or yellowfin tuna sashimi pointed up by lime oil, pressed tomatoes, wasabi rouille and basil caviar. Main courses might offer seared halibut with vegetable tajine, confit squid, chickpeas and lemon oil, or a pairing of smoked belly pork with langoustines, supported by cocotte potatoes, carrot pur?e and sorrel and watercress sauce. Desserts stay creative with the likes of poached pear with pickled walnuts, and Roquefort ice cream.
