An elegant country house in handsome grounds (including kitchen garden and orchard) with a relaxing dining room patrolled by friendly staff, and menus with a real sense of creative elan. Begin with a fungal homage in the form of wild mushroom consommé with pickled girolles and mushroom jelly, glinting with gold leaf, or beetroot-cured salmon with orange and shallot salad. A dazzling fish course is perfectly timed brill fillets with smoked haddock raviolo, samphire, truffled cauliflower purée and a tuile dyed black with squid ink, while meat could be pork steak on merguez and bean cassoulet. The all-important chocolate and salted caramel combination comes as fondant and ice cream.
