The Kingsley Hotel was built on the site of the city's public baths, resulting in a restaurant named after a diving-board. It's a split-level space with views into the kitchen, and full-drop windows on two sides looking over the River Lee and Cork's architectural heritage. Contemporary bistro food is the style, and produces a galette piled with crab salad, garnished with a pair of garlic-buttered claws, avocado mousse and apple gel, for starters. After that, there may be free-range chicken breast in a welter of spring veg, including peas Ó la franšaise, or harissa-spiced sea bream with a red wine glaze. Fortifying finishers include almond cake and mango mousse with thick dulce de leche.
