The modern steel-and-glass building stands out on the seafront, with floor-to-ceiling windows offering sweeping views of Colwyn Bay, and exposed steelwork, pendant lights and industrial-chic looks that smack of a hip, big-city eatery. The man whose name is above the door made his bones with big-name chefs and has been chef-patron of Odette's in London's Primrose Hill since 2008, so you can expect sharp modern British bistro ideas built on prime materials. Melt-in-the-mouth lamb breast comes with aubergine, cumin and yogurt, while main course gilthead bream is partnered by saffron orzo, crispy pancetta and braised kale. Finish with Porth Eirias baked Alaska.
