The approach down a tree-lined drive through the grounds - some 500 acres in total - raises expectations that are well and truly met when the glorious Palladian house comes into view. It's a stunner - grand, but not too imposing, just a beautiful house with a triple gable and portico entrance. Facilities such as a luxurious spa, equestrian centre and cookery school mark it out as one of the UK's top country-house experiences. There's a brasserie, but the main eaterie is The Park Restaurant, headed up by Hywel Jones for 10 years, which is one of the region's most compelling dining destinations. The restaurant is rich with period detail and is formally dressed - swagged curtains, chandeliers, and precise table settings. The impeccable service team seem full of pride, and it's the kind of place where you the feel need to dress up (smart casual is fine though). The kitchen gets full use of the kitchen garden and what isn't home grown is sourced from trusted suppliers, many of whom are certified organic. The setting may be formal and genteel, but the cooking is modern and creative. Things start with a roster of thrilling canapés and amuse bouche including a sublime scallop and a fun yuzu lolly. The first course proper might see poached fillet of Devonshire rose veal with glazed sweetbreads, marinated salsify and Wiltshire truffles, or go for duck foie gras two ways. Among main courses, loin of Bwlch Farm venison comes with chocolate jelly and a hint of cumin, and braised fillet of turbot is partnered with Cornish crab, hand-rolled macaroni and Wiltshire truffle butter. The technical precision and accuracy of the cooking continues with desserts such as croustillante of roast pineapple with rum and raisin parfait.
