A short trot from the high street of England's oldest town, The North Hill presents two faces to the world, one a traditional half-timbered medieval look, the other of yellow-painted brickwork. The diversity continues indoors, with a range of pared-down spaces, including a reclaimed 15th-century hall house repurposed into the hotel's function room. Unclothed lightwood tables lend a Nordic touch to the Green Room bistro, where the produce of East Anglia is celebrated with gusto, from Mersea oysters to Red Poll beef and extra-virgin rapeseed oil for the dressings. The cooking is traditional bistro fare, and none the worse for that, beginning with seafood specialities such as dressed crab and citrus mayonnaise, or a salmon and crayfish fishcake in chervil dressing. There are days when only sausages and mash in onion gravy will do, but if you're after something glitzier, look to lemon and garlic lamb with new potato crush and spinach in salsa verde. Coffee and cake is an all-day treat, the daily-changing specials including carrot and walnut, or chocolate and red wine cake.
