Eddie and Shirley Spear's restaurant has played a considerable part in building Skye's gastronomic reputation over the past 30 years. Not a place to stand still, this iconic restaurant has seen quite a few changes in the past year or so, with a refurbishment, a change of chef and a rethink that goes right down to the bespoke ceramics and crockery. A remote, whitewashed cottage with views of loch and land, the decor reflects a strong sense of place. This same respect for the island's identity is mirrored by the inventive cooking, which draws from the Scottish and Nordic heritage of the Highlands and Islands and allows tiptop raw materials (many grown within walking distance of the kitchen) the opportunity to speak for themselves, truly living up to the ethos of 'the best of Skye, land and sea'. Many traditional techniques are employed including salt curing, smoking and, for the current year, cooking root vegetables in a salt and ash crust. The cooking is all delivered via concise menus (five options per course) alongside a seven-course tasting extravaganza ideal for those planning to stay in one of the restaurant's charming bedrooms. You might kick off with a crisp-coated egg (sourced from a croft behind the restaurant) teamed with summer vegetables, pickled cauliflower and toasted hazelnuts, or an impressive oyster number that sees the bivalves served in tempura batter, dressed to thrill and as they come. Beef from Orbost Farm (cheek, tongue, blade and oxtail) with shallot tart and potato fondant is a flawless main course of perfect balance. Creative talent is behind a dessert offering 'temperatures and textures' of bitter chocolate complemented by caramel, popcorn and Skye sea salt, and another that brings together those comforting bedfellows rhubarb and custard in an imaginative manner.
