Once the coach-house of next-door Newton Hall, the white-fronted Parkers Arms hides in a Ribble Valley village near the Trough of Bowland. Inside are stone floors and low ceilings, with a conservatory feel in the dining area. Nearly all the produce is sourced within a 30-mile radius, and a stripped-down approach to pub food is counterpointed with more speculative modern modes. Brioche-crumbed pheasant with pungently mustardy piccalilli is a great seasonal opener, prior to a traditional raised flaky pie of Goosnargh chicken and leek, which spills forth its contents next to a heap of smooth-textured mash. Perfectly executed chocolate fondant made with 70% Valrhona is teamed with poached cherry compôte.
