Monty's is part of the Grade II listed George Hotel, built, like much of the spa town, in the Georgian era. It's a modern and lively brasserie, with a bare boarded floor, brown leather-look seats at unclothed tables, plain walls and a cheerful atmosphere. The seasonally-changing menu is exactly right for the place, and what the kitchen does supremely well with sound ingredients, adding a degree of complication to dishes without pushing them into a taste too far. Crab, cod and dill fishcakes, for instance, come with crushed peas, parsley purée, pickled onions and lemon and caper mayonnaise, and that's just a starter. Roast partridge might appear in season, stuffed with apricots and cranberries, served with red wine jus, braised leg, pickled pears and fondant potato. The appeal is broadened by the likes of Thai crispy duck with chilli and sesame dipping sauce, then seared harissa-spiced salmon fillet with ras el hanout dressing, chilli and lemon couscous and cauliflower beignets. To top things off might be sticky toffee pudding with rum and raisin ice cream.
