With bare-boarded floors, brown leather-look seats and unclothed tables, the friendly, uniformed staff add to the cheerful atmosphere. The kitchen takes sound seasonal ingredients, adding a degree of complication to dishes without pushing them too far. Seared Scottish scallops, for instance, come with crisp Parma ham, tomato and chorizo purée, sautéed courgettes and basil cress. A trio of Blythburgh pork might appear with apple and cider purée, baby turnips. Finish with spiced apple tarte Tatin.
