The first-floor dining room may look out on St James's, but conjures in its name - Petrichor - the scent of freshly moistened earth after the first rains. The kitchen draws on thoroughbred suppliers for materials such as Wicks Manor ham hock, served à la Benedict with hollandaise and spinach. After that, it may be sea bream with brown shrimps and curried cauliflower purée in capered lemon butter. Hold your nerve for a dessert billed as Chocolate Avalanche - ganache with honeycomb and hazelnut ice cream.
