Clever use of plush drapes and screens softens the capacious space of the Botanica Restaurant, and the kitchen treats local ingredients with French-inspired flair. Spicy tiger prawns, orange and dill-infused salmon, and smoked mackerel rillettes make up a seafood platter, then roast rack and slow-cooked rump of local lamb is delivered with aubergine caviar and buttery potato mash. Dessert could be a riff on lemon, in the shape of a zesty tart, madeleines, and jelly.
