Here, the style is modern Irish brasserie food that sweeps over a broad arc from Thai beef salad with peanuts and julienne veg, or prawn and courgette risotto dressed in lemon and chilli, to start, closely followed by the likes of herb-crusted hake fillet on ratatouille in basil velouté, lamb shank with mustard mash in red wine jus, or a classic surf-and-turf pairing of fillet steak and lobster in garlic butter.
