The market town of Carrickmacross is home to this handsome stone-built hotel, once called White's, a name that lives on in its principal dining room, which is kitted out in checkered upholstery with wood dividers and big floral pictures. Here, the style is modern Irish brasserie food that sweeps over a broad arc from Thai beef salad with peanuts and julienne veg, or prawn and courgette risotto dressed in lemon and chilli, to start, closely followed by the likes of herb-crusted hake fillet on ratatouille in basil velouté, lamb shank with mustard mash in red wine jus, or a classic surf-and-turf pairing of fillet steak and lobster in garlic butter.
