Contemporary Indian fusion cooking is nothing new, but this kitchen throws elements of molecular wizardry into the mix. 'Einstein in India' starts things off by throwing the kitchen sink at a dish comprising whisky smoke-scented king prawn tikka, a sous-vide Lucknowi lamb chop with 'candy floss', Hyderabadi mince cupcake and a chicken kebab with tikka masala spheres and 'disappearing' Bombay mix. By comparison, Ratnagiri mango lamb is almost mainstream, the lamb cooked in a balanced sweet and spicy sauce of coconut milk and mango pulp. Dessert is another innovative idea - a crisp tikka masala samosa alongside white chocolate and saffron mousse cake with coconut ice cream and applewood smoke.
