Seiont Manor Hotel

2 rosettes

Positioned between Snowdonia National Park and the Menai Strait, Seiont Manor has upscaled rather dramatically since its days as a working farmstead. A first course delivers the taste of the sea in the shape of lobster bisque with seared scallop, buttered langoustine and a salmon samosa, while main-course venison comes in the inventive company of smoked potato and chocolate sauce. There are good cooking skills on show and a creative take on regional ingredients; local sewin trout, for example, prepared confit-style with vanilla, and served with fennel purée and garlic 'whizz'. A dessert of pistachio and orange cake ends things on a high.
