The Maison flies the tricolour for proudly French seafood cuisine in the bustling heart of Bury St Edmunds. The place is teemingly popular, indicating that the taste for unreconstructed Gallic cooking never went away. Start with a quenelle of poached chicken and blue cheese mousse accompanying a caramelised scallop garnished with truffle, or perhaps marinated langoustines with baby carrots and sprout leaves. The main deal arrives in the shape of sea bass with smoked onions in pumpkin velouté, or poached halibut with creamed mooli in Japanese dressing. There are meat dishes too - the beef featherblade is a cut above - and a study in chocolate and cherry to finish.
