In a gloriously wonky period building that reflects the historical legacy of this ancient town, this decidedly up-to-date address is turning out inspired modern British food with seasonal and local ingredients to the fore. It all takes place in a room with a slick contemporary finish - nothing flash mind you, just smart and gently refined, with a keen and knowledgeable service team setting the tone. Sweet Mersea crab arrives in a prettily presented first course with tempura squid, fiery pickled mooli and avocado purée, followed by slow-cooked sirloin of beef with braised shin, salsify cannelloni and parsley purée. Finish with a celebration of summer in the form of strawberry consommé and lavender pannacotta. One to watch.
