If you're wondering what the Yorkshire Dales have to do with the West Country, the name comes from the Duke and Duchess of Devonshire who run a mini-empire of switched-on, stylish boltholes. The place presents a sober face to the world, but inside, the Duchess has hit it with a contemporary boutique makeover that is all vibrant shades of lilac and blue, sensuous fabrics and attractive artwork in the funky bar and conservatory bistro. Informal, friendly service feeds into the easygoing vibe, while on the food front, please-all menus are driven by quality ingredients, with simple pubby classics such as fish and chips or steaks thrown into the mix. Otherwise, ham hock terrine with black pudding beignet and mustard mayonnaise might precede a piggy trio of pork fillet, cheek and belly with chive mash and carrots, or sea bream with ratatouille and salsa verde.
