Caer Beris Manor Hotel

2 rosettes

This timber-framed country-house hotel sits in 27 acres of parkland bordered by the River Irfon. Dining takes place in the conservatory or the panelled dining room, where a large stone fireplace is a focal point. The kitchen gives a contemporary European spin on country-house cooking, confidently handling some beguiling combinations. A starter of rump of lamb is accompanied by saffron pannacotta, pomegranate and spiced aubergine, and a main course of John Dory by cauliflower purée, orange-glazed fennel and curry oil, and beef fillet comes with morcilla sausage, chanterelles and red wine reduction. End with mocha torte with espresso syrup and salted caramel ice cream.
