Built in the 13th century next to the village church and set in 10 acres of grounds, classic Cotswold country-house hotels don't come more impressive than Buckland Manor. The inside meets expectations, too, with wooden panels, mullioned windows, stone fireplaces - and fine old furniture all present and correct. Formality is observed (jackets in the dining room please, gents) and the restaurant toes the style line, with its white-painted panels, portraits on the walls and elegantly dressed tables setting the tone. Headed-up by Will Guthrie, the kitchen strikes a more contemporary note, delivering pin-sharp modern British food that is creative and well judged without falling over itself to be cutting-edge. Halibut is smoked on the premises and arrives in a first course with tomato and cumin bavarois, curry crackers, pickled mooli radish and coriander seed dressing. Next up, a visually striking main-course delivers pan-fried hake partnered with black squid ink pappardelle, charred broccoli and caviar cream sauce, while meatier appetites might be assuaged by partridge breast and confit leg meat sausage with red onion and port purée and creamed leeks. For dessert, set chocolate cream is topped with praline for crunch, and matched with cherry sorbet, boozy griottine cherries and bubbly aerated chocolate.
