The Villiers has a smartly kitted-out restaurant overlooking a courtyard and the kitchen concentrates on tried-and-tested dishes. Thus, pan-fried fillet of sea bass with potato purée and garden greens might be an alternative main course to pan-fried calves' liver with bubble-and-squeak, pancetta and mustard sauce. More innovative dishes are just as well handled, seen in a gently flavoured starter of mushroom, leek and spinach risotto with goats' cheese mousse and mushroom velouté, followed by slow-cooked breast of lamb with piperade, goats' curd, aubergine, polenta and pine nuts, all components adding up to a satisfying whole. End with one of the enjoyable puddings, such as pistachio baked Alaska with candied pistachios.
