In a prime spot on the High Street of this pretty, touristy village, Russell's is smartly decked out in contemporary style. Pressed pig's head terrine, its meat falling apart at the touch of a fork, is a well-executed starter, served with warm red wine jus and chunks of salsify and turnips braised in red wine, an alternative to seared scallops with celeriac, prunes and Parma ham. Roast breast and confit leg of duck is a fine main course, accompanied by juniper sauce, spicy pear and blackcurrant crumble and fondant potato. Puddings get heads turning: a light plum soufflé, say, with subtle Earl Grey pannacotta, poached plums and frothy almond foam.
