Henbury Lodge retains the feel of a Georgian country mansion, with its portico entrance, elegant interiors and a many-mirrored dining room, the Blaise restaurant, done in pale primrose. The cooking has more than a little of the country-house style about it. Start with a sauté of chicken livers and smoked bacon in a salad with caramelised hazelnuts, prior to a well-judged main course of crisp-skinned haddock with two-tone carrots (yellow and purple) or the signature rabbit leg filled with black pudding and apple, wrapped in Parma ham, on leeks in grain mustard sauce. For dessert, try luxuriously gooey treacle tart with mascarpone and an unusual but effective marmalade ice cream.
