27 Church St, BRILL, HP18 9RT

Meat fans need look no further than this stylish pub and restaurant in a beautiful hilltop village. It's a tastefully renovated spot that's a long way removed from a pint-and-packet-of-crisps boozer, but nor is it a pretentious gastro-pub aimed at fat wallets. Diners walk past the action in the open kitchen on the way to the rustic-chic dining room, where the modern British line-up makes good use of the rare breed pigs and English Longhorn cattle that owner David Howden raises with a local farmer. For starters, Aylesbury duck liver parfait with red onion marmalade and warm brioche is a superlative version of an old favourite. Then main course might be faggots of local lamb with creamed potatoes, beetroot, hispi cabbage and rich lamby gravy. If you're up for a fishy alternative, wild Cornish black bream is timed just so, and accompanied by home-made pasta with sea herbs and vegetables, wild garlic and hazelnut pesto. For pudding, there's a vibrant Sicilian lemon posset with ruby grapefruit and mint ice cream, or good old treacle tart with buttermilk sorbet. If you're impressed by the meat you've just eaten, the butcher's shop next door will sort you out with supplies to take home.
