The original mothership of chef Ben McKellar's Ginger-themed stable of restaurants is tucked away on a side-street close by the seafront. It's a cosy, bistro-style venue decorated in neutral hues and hung with artworks for sale - perhaps paintings of cows and sheep on the South Downs to put you in mind of the kitchen's sound local sourcing ethos. A loyal local fan base keeps the place jam-packed, but on-the-ball staff run it with admirable cool, and it has the unbuttoned vibe that is par for the course in Brighton. Assured modern European ideas kick off with pork cheek with chargrilled leeks, apple, sesame seeds and miso crisps, followed by rump of Sussex lamb with a pistachio and herb crust, confit potatoes, peas and mint jelly - a simple well-conceived combination of flavours which comes together in a lovely, seasonal, vibrantly-coloured dish. Daily fish specials might encompass lemon sole with scallop ravioli, spinach, and horseradish and cucumber sauce. Desserts maintain the standard with another admirably summery pairing: a textbook, well-risen strawberry soufflé with clotted cream ice cream.
