Just up from the seafront on the cusp of Brighton and Hove, at least before the two became municipally one, the Gingerman was the original venue in an expanding local portfolio of Ginger thisses and thats. It began 2015 with a refurb, in which creamy neutrality was startled up with lime-green and brown flocked upholstery in floral art nouveau patterns. Cheeringly constant is the commitment to dynamic modern British cooking with an inventive slant, notably incorporating touches of the Maghreb tradition. Maple-glazed pigeon breast with pine nuts and dates vies for first-course attention with salmon 'pastrami' served with caramelised parsnip and labneh, as well as an egg yolk. Mains push the envelope further for vegetarian duck egg curry with a dosa, lemon pickle and green chutney, or there may be an anatomist's approach to beef - tongue and cheek as well as fillet - garnished with charred onion and parsley root in hearty braising juices. A soufflé for two is a pleasure, perhaps rhubarb with rhubarb and custard ice cream.
