In Brighton's famous Lanes, this bijou restaurant is big on small plates, the idea being tapas-style sharing. The menu's economically worded fish, veg and meat options - four of each - reveal nothing of how beautifully the open-kitchen team prepares them, thus 'Scallop, turnip, parsnip, miso' arrives as far more than the sum of its parts, the scallops glazed, turnips crisped wafer thin, parsnips cubed. Another succinct listing masks cuttlefish filled with its own tentacles, crispy pancetta and celeriac, served with gomasio mayo. And there's a lot more to 'Lamb leg, asparagus, broad bean, oyster' and 'Artichoke barigoule, red pepper, olives' than meets the eye.
