The endearingly asymmetrical timbered Tudor mansion was once the home of one Henry Roper, a manservant of Catherine of Aragon. Nice work if you could get it. It retains much of the panelling, oak beams and ornate ceilings of the 16th century, and has been gently eased into the modern hotel trade with sensitivity and class. An attractive courtyard garden makes a fine venue for sunny days, and you can bet the log fire will have been lit to cheer the scene in winter's chill. The Tudors dining room is a sight for sore eyes, with its heavy beams, helical stanchions of weathered oak and chairs with Gothic-arched backs, but the cooking doesn't restrict itself to any English yesteryear. Start with a dish of English garden snails and French bulots (the kind that look like whelks), girolles, baby squid and confit garlic, a something-for-everyone assemblage of good things, which may be succeeded by locally-reared roebuck with variations on beetroot (pickled, puréed and sorbet). Dessert could be jasmine tea chiboust with passionfruit ice cream.
