The former 17th-century coaching inn is today a slick boutique restaurant with rooms. Chef Richard Collingwood is passionate about the produce he can source from nearby. And it's a rich larder indeed - Herdwick Hogget from the local fells, and fish and shellfish from Whitehaven represent the outstanding ingredients he can rely on. A winter menu might include Cumbrian Herdwick, artichoke barigoule, mushy peas and Merquez; Cartmel Valley duck breast, confit carrot and black pudding; blackberry parfait, saffron poached pear and caramel; or 'raspberry and white chocolate'. Dishes come with recommended wines and a wine flight is also available.
