This Georgian mansion has morphed into a swish hotel with a brasserie, which despite its subterranean location actually looks over the gardens. Dining on the terrace is also an option, weather permitting. The menu is a tribute to local produce and follows the seasons with mainly British-influenced dishes. A fish plate with tempura of sole with chilli jam, pineapple salsa, cured trout, lemon and lime emulsion, potted Kilmore crab and bread croute opens the show, then roast breast of chicken, twice cooked leg of chicken with butternut squash and thyme purée served with a truffle scented pomme mousseline. To finish, mango parfait, raspberries, honey comb and raspberry sorbet.
