The Four Seasons dining room occupies a lavishly decorated octagonal space, with neo-classical sculptures, rich colours and well-spaced, well-dressed tables. The kitchen offers up classically-inspired dishes with contemporary touches and a decent showing of regional produce. Confit pork belly, for example, comes with apple balsamic and deconstructed piccalilli to cut through its richness, with main courses serving up locally-sourced steaks or cannon of lamb with buttered leeks and herby mash. Dessert include a classic crème brûlée with a cherry biscotti or a rhubarb crumble tart, and the cheeseboard stays true to Lancashire.
