The master builder commemorated in the name of this cosily rustic 18th-century hotel once built ships for Nelson's fleet on the grassy areas running down to the River Beaulieu. With those tranquil watery views as a backdrop, you can expect sound modern British cooking based on well-sourced local ingredients - home-made linguine with Dorset crab, lemon and thyme oil as a starter, then a ballotine of local pheasant pointed up with tart blackberry jus and matched with roast root vegetables, buttery kale and mash. For dessert, there's a deconstructed take on Millionaire's shortbread, or you might go for a plate of impeccably local cheeses.
