On the edges of the Chatsworth Estate and serving up wonderful views, the Cavendish comes with a real sense of blue-blooded Englishness. The elegant and formal Gallery Restaurant - with its white linen and professional service - is where the serious culinary action takes place. Its classic British cuisine fits the bill, with an occasional modern twist and emphasis on quality ingredients, vibrant flavours and unfussy presentation. Lobster bisque, for example, perked up with a wasabi foam, followed by a trio of Calow duck (pan-fried breast, confit leg and croquette) served with braised red cabbage and orange fondant potatoes. Baked egg custard with honey and walnut ice cream and coffee tuile brings things to a close with distinction.
