The restaurant at 17th-century Barnsley House is named the Potager, after the ornamental and vegetable garden designed in the 1950s by Rosemary Verey which it overlooks. Using fresh produce from the garden. Perfectly cooked lamb sweetbreads in a noteworthy jus are served with no more than morels and garden chard, or there might be smoked haddock and pea risotto. An Italian influence is evident in some dishes: a starter of Vincisgrassi, for instance, based on an 18th-century recipe for baked pasta with Parma ham, porcini mushrooms and truffles. End with a fruity pudding such as passionfruit tart with tangy lime syrup and mascarpone, or roasted figs with Venetian-style rice pudding.
