The arrival of transport by mail coach in the 18th century saw this former farm develop into an overnight stop for travellers between London and Carlisle. Charles Dickens probably stayed here in 1839, hence the fine-dining restaurant is named after him. Following an amuse-bouche, two people might start by sharing wood-pigeon with smoked yogurt, blueberry ketchup, spelt and sweet cicely, then continue in separate directions, one with pan-fried halibut, mussels, saffron potato, salsify and puréed kale, the other with Marley's beef rump cap with braised cheek, horseradish mayo, Jersey Royals and spinach purée. Among the desserts is rhubarb and custard anglaise with beurre noisette.
