A castle for the 21st century, Glenskirlie is a bright white pile, kitted out with a conical-roofed turret here, a little step-gabling there. Set in central Scotland, it's a country retreat that welcomes the wedding trade and has a range of eating options. Start with the like of seared scallops with crab and lime mousse, pickled watermelon, lemon-rind purée and Jerusalem artichoke. Mains are no less labour-intensive, partnering venison loin with braised venison and potato terrine, celeriac fondant, smoked apple purée and wilted spring greens in red wine jus. Desserts spin variations on apple, or fashion banana into a parfait alongside caramelised banana, cinnamon pain perdu and nutty ganache.
