Pan-seared scallops are matched with creamed cauliflower, pea shoots, raisins and a mildly curry-spiced dressing, followed by a well-conceived main course partnering cumin-braised pork belly with cabbage and apple, cider jelly, puffed crackling, and a honeyed apple sauce. Fish cookery is handled with equal aplomb. Dark chocolate fondant with a richly oozing centre is a good way to finish, particularly as it comes with white chocolate sorbet, crème fraîche, and chocolate streusel.
