Set in beautiful sub-tropical gardens overlooking Baltimore Harbour to Roaringwater Bay and Carbery's 100 islands, it is hardly surprising that the Haffner family have put down roots at their delightful 10-room hotel since 1979. The kitchen makes good use of produce that is locally grown, reared and caught, organic whenever possible, and all pastries and breads are home-baked. The beamed and stone-walled restaurant provides a smart setting for a repertoire that runs to seared wild pigeon fillets with a zippy red grape and chilli salsa, followed by rack of Slaney Valley lamb, or king scallops flambéed in Cognac and cream.
