Galgorm is a luxury hotel with the River Maine running through its 160-plus acres of glorious parkland, not far from the spectacular scenery of the north Antrim coast. There's a lot going on here, with extensive meetings, conference and wedding facilities, a number of spa and treatment areas, including a Thermal Village, a champagne and gin bar, a pub and live entertainment. The whole of the interior is beautifully furnished and decorated, and a glossy sheen of opulence hangs over the place, not least in the River Room Restaurant, where floor-to-ceiling windows look over the fast-flowing river, romantically floodlit after dark. The kitchen has at its disposal the estate's own kitchen garden, sourcing everything else from local artisan producers (listed on the menus), so seasonality is to the fore on the daily-changing menus. Canapés with drinks are a promising foretaste of what follows, borne out by well-considered starters such as sea trout céviche with radish, oyster, cucumber and buttermilk, or the earthier flavours of carpaccio with marrowbone, blue cheese and mushrooms. The kitchen's approach to its modern style rests on classical, well-honed techniques, with main courses thankfully not too cluttered, and combinations chosen with flavours in mind. Duck breast, for instance, is accompanied by a Madeira jus, Savoy cabbage and beetroot, and halibut fillet with beurre noisette, cockles, pearl barley and cauliflower. As to be expected in the context, a few luxuries can be spotted, with shavings of truffle added to humble potato and leek velouté with croûtons, and a textbook rendition of tournedos Rossini among main courses. Puddings maintain the kitchen's innovative approach, among them perhaps buttermilk pannacotta with rhubarb, elderflower, white chocolate and honeycomb, and chocolate delice with burnt citrus, passionfruit and pistachio nuts.
