In possibly Ireland's most opulent Regency house, the high-ceilinged dining room gazes out towards a temple where a water feature cascades. A walled garden supplies the kitchen with plenty of produce, as do the resident bees, and lucky humans are regaled with French-inspired contemporary cooking of considerable dazzle. A trio of scallops comes with soused and puréed cauliflower in a caper-dotted shellfish dressing to start, prior to salted cod with langoustine cannelloni in truffled beurre blanc, or magisterial Kilkenny duck with date purée, roasted carrots and spinach in a glossy orange jus. The signature dessert is a traditional nutmegged egg custard tart garnished with shards of meringue and rhubarb sorbet.
