A Glasgow tea merchant built Fairfield House as a seaside retreat affording views over the firth towards the Isle of Arran. Confident modern Scottish cooking is the kitchen's forte, with pedigree Scots produce used as the bedrock of an appealing menu of big flavours. Cairngorm grouse is a good bet, particularly in a starter comprising roast breast and a slow-cooked croquette partnered by celeriac and pearl barley risotto and girolles. Mains are equally eye-catching compositions, perhaps another two-way serving - venison this time - its roast loin matched with a steamed pudding, alongside root vegetable Parisienne and creamed potatoes. Finish with a chocolate fondant with coconut sorbet, tuile and jelly.
