Elaborate ceilings, heavy drapes, an oak staircase, panelling and antiques define the style of this luxury country-house hotel, an ivy-covered Victorian pile in Dovedale. The kitchen does all its own smoking, curing, butchery and baking and fully exploits the finest local produce. It moves with the times too, turning out Indian-spiced gurnard with tomato and chilli chutney and crème fraîche, and another starter of salmon cured in beetroot and vodka, served with caviar, sour cream and pickled cucumber. A self-assured way with materials means that dishes are successfully cohesive, seen in main courses of pan-fried breast and shepherd's pie of duck cut by rhubarb, accompanied by sweet potato purée and chard, and more classically orientated rack of lamb with dauphinoise, roast tomatoes and buttered spinach. Fish is used to good effect: perhaps monkfish fillet, timed to the second, roasted in curry butter served with textures of cauliflower. Desserts such as apricot bread-and-butter pudding with Amaretto ice cream, and chocolate brioche ravioli with vanilla Chantilly cream tick all the right boxes.
