The Rosette award for this establishment has been suspended due to a change of chef. Reassessment will take place in due course under the new chef. It's all happening at Coworth Park, the hotel at the centre of a sprawling 240-acre estate next to Windsor Great Park and the racing at Ascot. Sporting activities abound: tuition in polo is aimed at the newbies, while tennis, riding and croquet may well all be in full swing, and the less outdoorsy may be tucked up under fluffy towels in the spa. It all comes within the aegis of the Dorchester Collection hotel group, so a certain level of cosmopolitan luxury may be taken as standard, but without Park Lane's roaring traffic. A plethora of settings for eating is available too. Nobody will bat an eyelid if you rock up in mud-spattered wellingtons in The Barn, but you might think better of traipsing into the Restaurant in them. Croquettes and poached cheeks of cod in curry foam, or Jerusalem artichoke velouté with chestnut custard are the kinds of thought-provoking dishes that might start you off. Then pedigree meats star in main courses such as slow-cooked Windsor beef fillet with puréed broccoli and baby carrots, or roast loin and braised shoulder of Swaledale lamb with red cabbage and spinach. Supporting elements do just that, support rather than outshine the main items, so a gently poached fillet of Atlantic halibut comes with gem lettuce and chargrilled new potatoes in creamy fish stock, while seaweed gnocchi and pickled baby turnips are the considered accompaniments to gilt-head bream. Ingenious dessert ideas maintain interest, perhaps for mandarin blancmange and mandarin soup with confit cranberries, or dark chocolate parfait with salted caramel and Earl Grey ice cream.
