The CB - to its friends - is in Arkengarthdale - a tributary valley of celebrated Swaledale. It's named after a Georgian parliamentarian, and the beamed dining room is done out with pale wood and generously spaced tables. Local farmers and fishermen supply its seasonally-changing menus of modern Yorkshire cooking. This is shown off to best effect on the Mirror Menu, where pan-seared scallops come with Parma ham, and apple and sage purée. After that, there's a heartily sustaining trio of pork, comprising belly, fillet and cheek, with purple sprouting broccoli, boulangère potatoes, and apple and cider jus.
