Charles Bathurst Inn

The CB - to its friends - is in Arkengarthdale - a tributary valley of celebrated Swaledale. It's named after a Georgian parliamentarian, and the beamed dining room is done out with pale wood and generously spaced tables. Local farmers and fishermen supply its seasonally-changing menus of modern Yorkshire cooking. This is shown off to best effect on the Mirror Menu, where pan-seared scallops come with Parma ham, and apple and sage purée. After that, there's a heartily sustaining trio of pork, comprising belly, fillet and cheek, with purple sprouting broccoli, boulangère potatoes, and apple and cider jus. Make space for classic custard tart with vanilla ice cream.
